The Hollow is a pilsner brewed with our northeastern farmhouse sensibility.  A very clean snappy lager. All ingredients are  CT sourced.

American IPA from across the river with El Dorado, Citra, Citra Lupulin Powder, Equinox hops.  

16oz./6oz.  [6.8% abv]

This German-Style Pilsner was the first beer ever brewed at Fox Farm in the early Spring of 2017.  Brewed with all German ingredients. Clean and crisp.

This West Coast IPA uses CTZ, Simcoe, Centennial and Citra to deliver a resinous pine and grapefruit profile with a hint of mango in the background. This is the way IPAs used to be made.

“She Drives A Second Generation Four Door Plymouth Satellite”  DIPA is a second generation version of their “She Drives...” Double NEIPA

12oz/6oz [8.5% abv]

This IPA hopped with hops that have a soft tropical and floral character.  All ingredients are CT sourced.

This Weizenbock boasts a beautiful caramel color, accompanied by malty, sweet flavors of banana, clove and a touch of spice

Chocolate coconut stout that start with a thick base stout and cram it full of freshly toasted coconut, raw cacao nibs, and vanilla beans. Let it warm in your glass as flavors of dark chocolate evolve into buttery coconut.

Baltic Porter brewed with de-bittered dark malts and hopped with fine European noble hops. A warmer fermentation starts in open tanks for one and a half weeks using a traditional lager year.

Sour flemish style oud bruin aged in whiskey, syrah and sherry barrels.

This Belgian-style tripel has a yeast character of banana and clove with an equally fruity body balanced with a light, earthy hop character.

Belgian-style farmhouse ale with a big surge of fruity aromatics and grapefruit-hoppy notes, the flavor of this complex, straw-colored ale tapers off to a peppery, dry finish.
